May is National Salad Month

For several years now, my main meal has consisted of salad, yes, leafy greens; and no, I’m not vegetarian or vegan, I just love salads! I attribute this passion for salads to a habit developed as a child, which I passed on to my kids.

Leafy greens for me aren’t a side or an afterthought — they’re the main event. Choosing greens every day is like a small decision that adds up. It’s satisfying, but not complicated. Balanced, but not boring. Some days it’s peppery arugula; other days it’s something buttery or crispy. No two bowls ever feel the same.

Salad 101

With two days left to celebrate start by mixing spinach, kale, or red leaf lettuce, for crunchiness, add shredded carrots, radishes, or red onions. And, for protein try low-fat cheese, or lean meat like fish or chicken breast. And add the dressing of your choice. Go on, try it!
